I made a dinner last night that was loosely based on this recipe from the Cooking Light website. We didn’t have enough couscous, so I cooked 1 cup of bulgur wheat and used that instead. I also did not have rotisserie chicken, so I sauteed some chicken breast in lemon juice, olive oil, fresh garlic and onions. I added some lemon zest and lemon juice to the wheat, plus some salt, pepper, fresh basil, cucumbers, diced tomatoes, feta cheese and just a little balsamic vinegar. I absolutely loved it, and it was really easy! Let me know if you try it, or add a different twist to it!
