Mexican night!

I wanted to mix it up a little bit, and I got a text from my sister the other night saying she had used my idea of tacos for dinner. Well, I had forgotten all about that! So here is my idea for a healthy(er) mexican night.

Tacos: If you really want to be healthy about it, grab some taco-sized whole wheat tortillas and make soft tacos. Otherwise, just try to find some hard taco shells that are lower in saturated fat and sodium. Brown up some lean ground beef or ground turkey with a taco seasoning (preferably low sodium), or get creative and season it up yourself! Cumin is always a great addition to mexican food, and you can chop up some fresh jalapenos and throw those in. Then just chop up some veggies and put them in individual serving bowls: some more jalapenos, onions, lettuce, tomatoes, some low-fat shredded cheese or low-fat sour cream (moderation is key!), maybe some guacamole…what else do you all usually add?

Black beans: I do have a tendency to cheat and buy the canned. They are much lower in saturated fat than refried beans, and a great source of protein. If you are looking at sodium content, you can either buy a low sodium variety or rinse them with water to reduce the amount of juice they are in. Again, go ahead and add whatever you want…chopped red or green peppers, onions, jalapenos…and if you have some leftover rice hanging around, you can always throw some of that in there too!

Veggies: Saute up a sliced zucchini, 2 1/2 cups of corn (off the cob if you’re super motivated, out of a can if you’re me!), some chopped red peppers and diced tomatoes (again, fresh or canned). Season them up as much or as little as you want, and enjoy!

PS-if you’re saying to yourself, where does my margarita fit in? Sadly, it does not. They are so high in sugar it is ridiculous. Not saying I don’t ever indulge, but they should definitely be a treat, not a part of a healthy meal! As for the Skinny Girl margaritas…some people swear by them, I personally thought they were gross. Although much better when I added Diet 7Up.


PPS-I don’t know if anyone else tried the broccoli from last week, but I agree-it was AMAZING! We have had it twice this week 🙂
